I promise that even though this salad is super simple - it's also SUPER yummy.
INGREDIENTS
1 package arugula, rinsed
1/2 fresh lemon
2-3 tablespoons olive oil
3 tablespoons grated or shaved parmesean pine nuts, toasted chickpeas or croutons (optional)
fresh cracked pepper salt to taste
INSTRUCTIONS
There's nothing to it, really. Put the arugula in a bowl, put all of the rest of the ingredients on top. For an added crunch I like to add toasted pine nuts or roasted chickpeas - or even croutons. And toss. Be sure to add lots of freshly cracked black pepper and a pinch of salt. It's the best salad ever, I promise.
